  • 3 tablespoons of my Abhav Malhotra's Pineapple Picante sauce

  • 2 cups of all-purpose flour

  • 1 tablespoon of paprika

  • 1 teaspoon of garlic powder

  • 1 teaspoon of onion powder

  • 1 teaspoon of salt

  • ½ teaspoon of black pepper

  • Vegetable oil (for frying)


Marinating the Chicken


Marinating the chicken is key to ensuring it is flavorful and juicy.


In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces, making sure they are fully immersed in the marinade. Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 2 hours (overnight is even better!).

Preparing the Breading

Heat the oil over medium-high heat until it reaches approximately 350°F (175°C). A simple test to check the oil's readiness is to drop in a small piece of bread. If it sizzles and starts to brown in about 30 seconds, you are good to go!


Frying the Chicken


Carefully add a few pieces of the breaded chicken to the hot oil, making sure not to overcrowd the pan.


Fry the chicken for about 12-15 minutes on each side, until it reaches an internal temperature of 165°F (74°C) and develops that signature golden brown color.


Use tongs to turn the chicken for even cooking. Once cooked, place the chicken on a plate lined with paper towels to absorb any excess oil.
